A New Take On Sweet Potato Recipes

This recipe is really more of a casserole than stuffing, but we were struggling to come up with a name for it.  This delicious recipe takes just under an hour to prepare and cook and is a great way to get more nutrients into dinner (and even some left overs).

What You Will Need

1 Large Sweet Potato

1 Pound of Ground Beef

4-6 Strips of Uncured Bacon

1-2 Apples

Oregano, Basil, and Parsley

Preparation

Slice sweet potato, bacon, and apples into small pieces and set aside.  pre-heat oven to 400 degrees

Begin by cooking bacon in a pan and add sweet potatoes and beef after bacon is heated up.  Add sliced apples into pan last and cook until sweet potatoes are soft and beef is mostly cooked.

Place contents of pan into oven safe dish and cook for 20 minutes at 400.

We like to season to taste with oregano, parsley, and basil.

Health Benefits of Sweet Potato
