Pumpkin or Banana Protein Pancakes
- 150g or 2/3 cup banana or pumpkin, mashed
- 3 eggs
- 1 scoop vanilla protein powder (want to skip the protein? substitute for 3 tbs coconut flour)
- 1 tsp vanilla
- 1tsp cinnamon
- 2 oz blueberries
- 1 tbl grass-fed butter for cooking
Mix all ingredients together, minus butter. Heat a cast iron pan with butter. Once the butter is bubbling add the mix to the pan; recipe should make 6 medium size pancakes. Flip each cake when center bubbles slightly.
We do not use maple syrup. Instead, we will top the pancakes with fruit, homemade applesauce, occasionally almond butter, or reduced sugar jam.
Total recipe: 460 calories, 45g protein, 30g carbs, 17 fat (minus butter)
Each pancake: 76 cals, 8g protein, 5g carbs, 3 g fat
