Northern Bean and Vegetable Chicken Soup
Fall is almost here! In our house that means lots of wholesome soups and starchy vegetables! Try this simple instapot soup recipes. If you don’t have an instapot a low heat in a crock pot for 8 hours works as well!
What You Need
- Cup Olive Oil extra virgin
- 1 Small Onion diced
- 2Medium Shallots chopped
- 4 Cloves Garlic mashed
- 2 Carrots chopped into coins
- 4 Celery Stalks diced
- 2 lbs chopped boneless skinless chicken thighs
- 2 cans northern Beans drained and rinsed (or 1/2 cup dry northern beans)
- 2 Bay Leaves
- 8-10 basil leaves chopped
- 1 – 5 inch Rosemary sprig chopped
- 5-6 Cups chicken bone broth
- ½ Teaspoon Sea Salt
- ¼ Teaspoon Ground Black Pepper
- 3 Cups Fresh Spinach add when soup is finished
Simple Instructions
In instant pot sauté oil, herbs, vegetables for 3-5 mins. Add chopped chicken thighs and brown them. Add remaining ingredients and cover with chicken stock. If you are using dry northern beans set instant pot for 90 minutes and let it de pressure naturally. Add spinach and cover for 3 minutes and serve.
