Flatbread Covered With Greek Salad and Chicken BreastWho says you can’t make a delicious mediterranean meal at home? This simple Greek dressing recipe can be made in minutes and enjoyed for days. Above is a simple serving suggestion of Greek salad with grilled chicken breast served on a flatbread.

Over the next few weeks we will be sharing some of our favorite summer recipes that help us to save money at the grocery store and choose healthier options than you normally find in a grocery store.

Buying salad dressing at the grocery store can be hazardous to your wallet and your health. Conventional salad dressings are loaded with hydrogenated vegetable oils, seed oils, and processed sugars. If you’ve been to our 1/3 Diet workshop you’ll know why we steer people away from these. Their healthier counterparts that are made with better oils and no sugars can cost upwards of $10 per bottle!

During the summer, we eat a lot of Greek salads, but we were getting tired of paying exorbitant prices for dressings that weren’t made with the aforementioned ingredients. This year we took matters in our own hands.

The ingredients are simple:

  • 2/3 cup olive oil
  • 1/2 cup ACV or red wine vinegar
  • 2 tbl Dijon mustard
  • 1 tbl minced garlic
  • Juice from 1/2 lemon
  • 2 tsp basil
  • 2 tsp oregano
  • 1 tsp onion powder
  • Salt to taste
  • Pepper to taste

Combine ingredients into a jar, shake, and serve. Buying these ingredients may be costly at first, but in the long run it will save you a great deal of money.
