Carnitas Seasoning Meatloaf

Are you looking to spice up your normal meatloaf recipe?  Try this simple meatloaf with Siete Carnitas seasoning, guaranteed to be a hit with family members of all ages.  This recipe can be made as a “normal” meatloaf using eggs, or (what we do) you can sneak organ meats like liver or kidney in.

Organ meats have some of the highest nutritional profiles of all foods.  Loaded with iron, retinol (the bioavailable form of Vitamin A), and many other vitamins and minerals; organ meats are considered by many to be some of the most nutritious foods available.  Despite this, very few people consume them due to their unique flavor and texture.  In this recipe we like to take 4-6 ounces of liver or kidney and puree it in our food processor and mix it into the meatloaf prior to baking.

We promise: if you prepare it correctly in the food processor, you WILL NOT TASTE THE ORGAN MEATS!

Ingredients:

2 LBS lean grass-fed ground beef

2 Chopped bell peppers

1 packet Siete carnitas seasoning (we buy ours at meijer)

1 egg or 3-5 ounces kidney/liver

Directions:

Puree organ meat in a food processor and combine all ingredients into a bowl and mix.

Form mixture into a loaf and place in a 9×13 pan

Bake at 425 for 35-40 minutes.
