Beef Carnitas with Pineapple Pico
- 1tbl grass-fed butter
- 1 pepper chopped
- 1/2 onion chopped
- 3/4 cup fresh chopped pineapple
- 1 crown broccoli chopped
- 2 lbs beef (we used 93% grass-fed)
- 1 packet of carnitas seasoning (follow directions)
Saute meat, pineapple, and vegetables in pan and add carnitas seasoning when appropriate. Serve in a bowl on a bed of shredded romaine lettuce.
Pineapple Pico
- 1/3 pineapple chopped
- 5-7 Roma Tomatoes chopped
- 1/2 white onion chopped
- 1 jalapeño
- 1 lime juiced
- 1/2 bunch chopped cilantro
- Salt to taste
Optional – add rice for additional carbs, if needed. Enjoy!
