Beef Carnitas with Pineapple Pico

  • 1tbl grass-fed butter
  • 1 pepper chopped
  • 1/2 onion chopped
  • 3/4 cup fresh chopped pineapple
  • 1 crown broccoli chopped
  • 2 lbs beef (we used 93% grass-fed)
  • 1 packet of carnitas seasoning (follow directions)

Saute meat, pineapple, and vegetables in pan and add carnitas seasoning when appropriate.  Serve in a bowl on a bed of shredded romaine lettuce.

Pineapple Pico

  • 1/3 pineapple chopped
  • 5-7 Roma Tomatoes chopped
  • 1/2 white onion chopped
  • 1 jalapeño
  • 1 lime juiced
  • 1/2 bunch chopped cilantro
  • Salt to taste
Optional – add rice for additional carbs, if needed. Enjoy!
