salad with green lettuce, red pomegranate seeds, and walnuts

In a large bowl combine:

organic spring mix
1-2 head romaine chopped
1 peeled pomegranate
2/3 cup blueberries
1/3 cup chopped pecans

Dressing
1/3 cup olive oil
1/3 cup apple cider vinegar
2 tbls maple syrup or local honey
Salt
1/2 tsp parsley

Shake and pour over salad. Chop salad while stirring in dressing and serve

Plate with golden brown roasted potatoes, pomegranate salad, and two chicken drumsticks
