This isn’t a traditional “stuffing” recipe, but if you’re looking to avoid the additional holiday carbs from regular stuffing, this is a great addition to your Thanksgiving and Christmas tables! This recipe calls for an air fryer. You can substitute an oven, but we strongly recommend adding an air fryer to your kitchen!

1 medium peeled and cubed butternut squash
2 chopped fuji apples
6 stalks of celery chopped
1 chopped onion
1/2 lb butcher box breakfast sausage
1/2 cup dried cranberries
1 tsp sage
1 tsp thyme
1/2 tsp cinnamon
2tsp oil (we used ghee)
Salt
1) Peel and cube butternut squash and mix with olive oil, 1/2 tsp cinnamon and salt. Bake in air fryer for 20 min at 375. Shake every 5 minutes.
2) Meanwhile, grease large pan with 1tsp oil of your choice (olive, ghee, tallow, butter), and sauté onions and celery on medium heat.
3) Add sausage and seasoning. Once fully cooked add cranberries, turn heat off, and cover until squash is done.
4) Add the squash to frying pan mix, everything together, and serve. Add salt and pepper to taste.
